Ingredients:
½ cup almond butter (nut butter of your choice – *unsalted)
¼ cup honey (or maple syrup)
¼ cup coconut oil
2 Tbsps unsweetened cacao powder
¼ tsp sea salt
1 tsp vanilla
1 cup rolled oats
¼ cup shredded unsweetened coconut
Instructions:
- Combine nut butter, honey, salt, and coconut oil in a small 2 quart pan and heat on LOW, stirring continuously, until everything is melted together.
- With the burner still on LOW heat, stir in vanilla and cacao powder, until everything is well-combined.
- Remove pan from heat, add in rolled oats & mix well.
- Next, add in the shredded coconut, stir until completely combined.
- Spoon mixture onto plate in cookie sized globs.
- Let cool in the refrigerator or freezer (if you’re unable to wait) until hardened.

Tips:
- Don’t try to cut down on the amount of oil, I’ve tried this and it messes with the texture of the cookie. Boo.
- Heat on your stove’s lowest setting – increasing heat gradually if needed. It is SO easy to over heat the mixture.
