Mouth-watering, HEALTHY, no-bake cookies!

Get excited. These are about to wreck your life!

Ingredients:

½ cup almond butter (nut butter of your choice – *unsalted)

¼ cup honey (or maple syrup)

¼ cup coconut oil

2 Tbsps unsweetened cacao powder

¼ tsp sea salt 

1 tsp vanilla

1 cup rolled oats

¼ cup shredded unsweetened coconut

Instructions:

  1. Combine nut butter, honey, salt, and coconut oil in a small 2 quart pan and heat on LOW, stirring continuously, until everything is melted together. 
  1. With the burner still on LOW heat, stir in vanilla and cacao powder, until everything is well-combined. 
  1. Remove pan from heat, add in rolled oats & mix well.
  1. Next, add in the shredded coconut, stir until completely combined. 
  1. Spoon mixture onto plate in cookie sized globs. 
  1. Let cool in the refrigerator or freezer (if you’re unable to wait) until hardened. 
  1. ENJOY!

Tips:

  • Don’t try to cut down on the amount of oil, I’ve tried this and it messes with the texture of the cookie. Boo. 
  • Heat on your stove’s lowest setting – increasing heat gradually if needed. It is SO easy to over heat the mixture.
